Ingredients
Marinade

80 ml olive oil

2 tbsp lemon juice

1 tsp lemon zest

1 tbsp Dijon mustard

1 tbsp Bragg Apple Cider Vinegar

1 tbsp soy sauce

3 garlic cloves, minced

1 tsp paprika

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste
Skewers

680g chicken breast or seitan
-
2 small zucchinis
-
1 red or orange capsicum
-
1/2 red onion
Directions

Prepare the Marinade:
In a bowl, mix together all the marinade ingredients. Set aside. -
Prepare the Skewer Ingredients:

Chop the chicken (or seitan) into 2.5 cm cubes.

Slice the zucchini into 1.25 cm wide rounds.

Cut the capsicum and red onion into 2.5 cm squares.

Marinate:

Add the chopped chicken (or seitan) and veggies to a large ziplock bag.

Pour the marinade over the ingredients, making sure everything is well-coated.

Seal the bag and refrigerate for 1 to 3 hours for best flavour.

Prepare the Skewers:

If using wooden skewers, soak them in cold water for at least 30 minutes to prevent burning.

After marinating, drain any excess marinade and assemble the skewers, alternating between chicken (or seitan) and vegetables.

Preheat your grill to medium-high heat.

Place the skewers on the grill and cook for 5-7 minutes per side until the chicken is fully cooked or the seitan is nicely charred and heated through.
