Collagen Protein coffee breakfast bars

Ingredients:

  • 1 cup oats
  • ½ cup mixed seeds
  • 2 tbsp sesame seeds
  • 3 scoops ATP Science Noway Protein Powder Iced Coffee
  • ½ cup shredded coconut
  • ¼ cup nut butter or tahini
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 40g dark chocolate, melted (for drizzling)

Method:

  1. Preheat your oven to 180°C and line a square baking tin with baking paper.
  2. In a large mixing bowl, combine oats, mixed seeds, sesame seeds, protein powder, and shredded coconut. Stir well to mix.
  3. In a separate bowl, whisk together melted coconut oil, nut butter or tahini, maple syrup, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until combined. Add 2-3 tbsp of water if needed to form a sticky mixture.
  5. Transfer the mixture to the prepared baking tin and spread it out evenly. Press down firmly to ensure the bars hold their shape.
  6. Bake for 25-30 minutes, or until golden brown.
  7. Let the bars cool in the tin for 5 minutes before transferring them to a cutting board. Slice into bars while still warm, then allow to cool completely.
  8. Drizzle melted dark chocolate over the top, if desired.
  9. Store in an airtight container for up to 7-10 days.
