Ingredients:
- 1 cup oats
- ½ cup mixed seeds
- 2 tbsp sesame seeds
- 3 scoops ATP Science Noway Protein Powder Iced Coffee
- ½ cup shredded coconut
- ¼ cup nut butter or tahini
- 3 tbsp coconut oil, melted
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 40g dark chocolate, melted (for drizzling)
Method:
- Preheat your oven to 180°C and line a square baking tin with baking paper.
- In a large mixing bowl, combine oats, mixed seeds, sesame seeds, protein powder, and shredded coconut. Stir well to mix.
- In a separate bowl, whisk together melted coconut oil, nut butter or tahini, maple syrup, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until combined. Add 2-3 tbsp of water if needed to form a sticky mixture.
- Transfer the mixture to the prepared baking tin and spread it out evenly. Press down firmly to ensure the bars hold their shape.
- Bake for 25-30 minutes, or until golden brown.
- Let the bars cool in the tin for 5 minutes before transferring them to a cutting board. Slice into bars while still warm, then allow to cool completely.
- Drizzle melted dark chocolate over the top, if desired.
- Store in an airtight container for up to 7-10 days.
