Lunch Box Level-Up: Protein Pasta Salad with Honey Mustard Zing

With a base of high-protein penne and fusilli, and loaded with creamy mozzarella, ripe avocado, toasted pine nuts and a zingy honey mustard-style dressing, it’s the kind of salad that keeps you energised and satisfied all afternoon.
Whether you’re meal-prepping for work, tossing together a quick school lunch, or just need something tasty to grab from the fridge, this colourful salad holds up beautifully and tastes even better the next day. It’s a balanced, protein-rich lunch box hero with Mediterranean flair and a satisfying crunch.
Ingredients for 2 persons:
- 100 gr high protein penne
- 100 gr high protein fusilli
- 3 slices of mozzarella
- 2 tomatoes
- 1 tbsp pumpkin seeds
- 1 tbsp pine nuts
- ½ red onion
- ½ avocado
- ½ lime
- handful of olives
- Callowfit ‘Honey Mustard Style’
- salt and pepper
Method:
Bring plenty of water to a boil in a pan. Add a little salt and olive oil. Boil the pasta for 12-15 minutes until cooked. Meanwhile, finely chop the red onion, avocado, tomatoes and mozzarella. Toast the pine nuts and pumpkin seeds briefly in a heated pan. Then drain the pasta and rinse with cold water.
Mix the pasta with the red onion, avocado, tomatoes and mozzarella. Add the olives and season with a little lime juice, salt and pepper. Finally add the Callowfit ‘Honey Mustard Style’ to the salad. Mix this all together. Finish the salad with the toasted pine nuts and pumpkin seeds.
