Raspberry Protein Jelly Mini Cakes

These Raspberry Jelly Mini Cakes are a delightful nod to the jelly cakes that graced tables from the 1950s through the 1970s. We've elevated this timeless treat with ATP Science’s NOWAY Protein and NOWAY Jelly, delivering a guilt-free dessert that's low in sugar and fat but high in flavour. Perfect for the whole family, these mini cakes are as fun to make as they are to eat—our office couldn’t get enough of them!

Ingredients

For the Cake:

  • 1 cup almond meal
  • 3 tbsp gluten-free flour
  • 2 scoops ATP Science’s NOWAY Protein (Vanilla)
  • 1 tsp baking powder
  • Pinch of salt
  • 2 eggs
  • ¼ cup almond milk
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

For the Jelly Coating:

  • 1 sachet NOWAY Jelly Raspberry
  • ¼ cup boiling water
  • ¼ cup cold water
  • Extra coconut for rolling

Method

  1. Prepare Your Oven and Tray: Preheat the oven to 180°C and grease a gem tray or mini muffin tray.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the almond meal, gluten-free flour, protein powder, baking powder, and salt.
  3. Whisk Wet Ingredients: In a separate bowl, whisk together the eggs, almond milk, melted coconut oil, maple syrup, and vanilla extract.
  4. Combine and Shape: Pour the wet ingredients into the dry mixture and stir until well combined. Spoon 1.5 tbsp of the batter into each hole of the prepared tray, shaping the mixture into a small dome if possible.
  5. Bake: Bake for 10-15 minutes, or until golden and set. Let the cakes cool in the tray.
  6. Prepare the Jelly: While the cakes bake, dissolve the jelly sachet in ¼ cup boiling water. Stir well, then add ¼ cup cold water. Place the mixture in the fridge to thicken slightly—it should be runny with some lumps when ready.
  7. Coat the Cakes: Once the cakes are cool and the jelly is semi-set, dip each cake into the jelly, ensuring an even coating, then roll in shredded coconut.
  8. Set and Serve: Allow the cakes to chill in the fridge briefly before serving. Enjoy a bite of nostalgia with a protein-packed twist!
