Choc-Coffee Protein Tarts

These Choc Coffee Protein Tarts combine the rich flavours of chocolate and caramel with a boost of protein, thanks to the inclusion of ATP Science Noway Collagen Protein.

Ingredients

Base:

  • 1 ½ cups oats
  • ½ cup shredded coconut
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • Pinch of salt

Caramel Filling:

Chocolate Topping:

  • 80g very dark chocolate, melted

Method

  1. Prepare the Base

    • Grease mini tart tins or a muffin tray.
    • Soften medjool dates by placing them in a bowl and covering with boiling water.
    • In a food processor, blitz the base ingredients until a sticky, coarse mixture forms. Add 1–2 tbsp of water if needed.
  2. Shape the Tarts

    • Spoon 1–2 tbsp of the base mixture into each tin or muffin hole, pressing it evenly along the sides.
    • For a baked option, preheat the oven to 180°C and bake for 10 minutes. For a raw option, place the tins in the freezer to set.
  3. Create the Caramel Filling

    • Drain the softened dates and blend in the food processor until a sticky paste forms.
    • Add tahini, Noway Coffee Protein, salt, and 2 tbsp of water. Blend for 5 minutes, scraping the sides as needed. Add an additional 2 tbsp of water and blend until smooth.
  4. Assemble the Tarts

    • Spoon the caramel filling evenly onto each base. Freeze for a minimum of 2 hours.
  5. Add the Chocolate Topping

    • Once the caramel is semi-firm, remove the tarts from the freezer and drizzle melted dark chocolate over the top.
    • Return the tarts to the freezer for another 2 hours to set completely.
