Salted Caramel Protein Blondies

Craving a delicious yet healthy snack? These Salted Caramel Protein Blondies are a perfect choice—packed with protein, rich in flavour, and ideal for lunches or a nutritious treat.

Ingredients:

  • 1 x 400g can of chickpeas (also known as garbanzo beans)
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 2 tsp vanilla extract
  • 3 scoops Switch Nutrition Protein (Salted Caramel)
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/3 cup dark chocolate chips (plus 1 tbsp reserved for topping)

Method:
  1. Preheat your oven to 170°C (fan-forced).
  2. Lightly grease an 8x8 pan with oil spray.
  3. Rinse the chickpeas and place them in a food processor. If using a blender, peel the skins from the chickpeas before blending.
  4. Add all ingredients, except the chocolate chips, to the food processor and blend until fully combined.
  5. Gently fold in 1/3 cup of dark chocolate chips.
  6. Spread the batter evenly in the prepared pan and top with the remaining 1 tbsp of chocolate chips.
  7. Bake for 18-20 minutes, adjusting for your oven's unique temperature.
  8. Once baked, allow to cool slightly, then cut into squares.
  9. Enjoy your healthy, protein-packed blondies!
